Why we made this guide: we are a food company that has worked with traditional fermentation for decades, and we noticed that most people researching digestion never hear the food-preparation side of the story.

Who wrote this, and why

We are a food company based in Murfreesboro, Tennessee. We have worked with traditional fermentation for decades, and we wrote this guide because the food-preparation side of digestion rarely gets explained in plain words. The guide is useful on its own. Near the end, it introduces the fermented food we make and how we make it, clearly labeled as our part of the story.
